Hydration is water weight divided by flour weight, so 1,000 g of flour with 800 g of water is 80 percent. The questions people type sit in the 75 to 85 percent band, and that band is where hand mixing starts webbing between your fingers. Where your own line falls depends on the flour, so check the dough rather than the number. Tilt the bowl and watch the mass. If it slumps, shines and leaves a film down the side, a spoon will only gather it into a lump on the handle. If it holds its shape and pulls away clean, you are in ordinary bread territory and a spoon is fine.
What is a Danish dough whisk and how is it different from a balloon whisk?
A Danish dough whisk is a flat open coil of stiff wire on a handle, and the difference that matters is that it has almost no interior for dough to pack into. A balloon whisk is a cage of thin wires. At what point in the bake do you use the whisk versus the scraper?
The handover is the moment the dough will hold a fold. Whisk until no dry flour is visible and the mass climbs the coil in one piece rather than several. That is the whisk finished for the day. If I can only buy one right now, which should it be?
The scraper, and it is not close. The whisk helps on slack mixes and nowhere else, and a wooden spoon plus one wet hand will get you through a mix badly but survivably. The scraper has no substitute at the other end. Nothing else in a home kitchen slides under an 80 percent dough and moves it without tearing, divides it in one press, cubes cold butter, cuts brownies and then clears the bench. Gauge is where cheap versions give themselves away, and what 0.03 in actually buys you is a blade that holds shape under pressure instead of flexing away from the dough.

What is the difference between a bench scraper, a bowl scraper and a dough scraper?
Most of those names describe the same steel blade, and one of them describes a genuinely different tool. Bench scraper, dough scraper, dough cutter and bench knife all get used for a rigid rectangular blade with a handle along the top edge. A bowl scraper is normally sold as a flexible curved sheet with no handle, meant to follow a bowl wall. Sellers are inconsistent, so read two specs instead of the label: the material and the gauge. If a tool bends when you press it into a loaf, it is a bowl tool being sold as a bench tool.
How do I do stretch and folds or coil folds using a scraper?
Wet the blade, get it flat under the dough, lift, and let gravity do the folding. The whole point is that neither hand goes into the dough.
- Dip the 6.3 in (16 cm) blade in water. Wet steel releases slack dough, floured steel does not.
- Hold it almost flat, about 10 degrees off the bench or bowl, and push it under the dough in one movement rather than several short pokes.
- Lift the near edge until the dough stretches and starts to fall back on itself. Stop before it tears.
- Fold that edge over the top and slide the blade out sideways.
- Turn the bowl or the dough a quarter turn and repeat, four times around.
- Rinse the blade between rounds. Two seconds under the tap resets it, and there are no wires to pick out.
Space the sets 30 to 45 minutes apart and stop after three or four of them. On a dough sitting near 78°F (26°C) that covers roughly the first two hours of bulk, and by the last set the mass should hold its shape for a minute or two after you set it down.
For coil folds the motion is the same but you go under the middle rather than the edge, lift the whole mass clear, and let the two ends tuck under themselves as you set it down.

Cube the butter cold, drop it into the flour, and chop straight down through the pile with the flat edge of a bench scraper, scooping the pile back to the middle every few passes. The edge presses cleanly through butter, so you are cutting rather than smearing, which is the failure mode when warm fingers do this job.
- Cut the butter into rough 1/2 in (13 mm) cubes straight out of the fridge, where it sits at about 38°F (3°C), and scatter them across the flour.
- Hold the blade flat edge down and press straight through the pile. Vertical presses only, no rocking and no dragging sideways.
- Every four or five presses, slide the blade under the pile and scoop the outside back into the middle so you are not cutting the same pieces twice.
- Keep the blade moving and stop while the pieces are still visible, somewhere between a pea and a small bean. Butter you can still see is butter that will still make layers.
- If the mixture starts to look creamy rather than crumbly, put the bowl in the freezer for 10 minutes and pick up where you left off. Butter begins to soften around 68°F (20°C), and once it has coated the flour it does not come back.
- Turn the crumb out, then scrape the bench clean with the same blade held flat and tip the crumbs back into the bowl.
Butter that softens starts coating the flour instead of sitting in it, which is also why a chilled surface changes how pastry dough behaves more than most people expect. A bench scraper has one advantage over a pastry blender here: it lifts the whole mixture and moves it, and it scrapes the bench clean afterwards in a single pass.
Will a metal bench scraper scratch a wooden board, a stone counter or laminate?
Used flat against the surface at a scraping angle it is fine on wood, stone and laminate. Dragging a steel edge hard across a soft or coated finish can leave a mark, so keep the blade low rather than digging a corner in. The failure is almost always a corner-led press with the weight of your palm behind it. Spread pressure across the 6.3 in (16 cm) edge instead.
