Split the collection. The eight or ten jars you reach for every week belong where you can see them, and everything else belongs in the dark — which is the only way the spice rack organizer for cabinet, drawer or wall question ever resolves, because no single location wins on both counts.

Texas A&M AgriLife Extension's storage sheet never bans an open rack. It bans the sites people hang one on: above the dishwasher, microwave, stove or refrigerator, or near a sink or a heating vent. Run that list around your own kitchen and most of the wall you were eyeing disappears. Houseland's own shelf is one tier, 3.9 in (10 cm) deep on the Small and 4.1 in (10.5 cm) on the Medium and Large, so what it settles is which wall, not how many rows.

What actually degrades a spice: heat, light, air or damp?

Heat leads, and the storage trials are one-sided about it. Sweet ground paprika held at 176 °F (80 °C) for 8 hours lost a measurable share of its colouring power: the ASTA extractable-colour index of the worse-affected lot fell from 198.1 to 161.9, while a second lot moved from 196.2 to 172.9 and did not shift significantly. That is an accelerated oven test rather than a shelf, so read the direction and not the digit — the same paper prints a 70% carotenoid loss in its abstract and 48% in its results, which is a good reminder that one number lifted out of a study is worth less than the pattern it sits in.

The slower version of that experiment ran a full year. Two red chilli pepper powders were split into portions and kept at room temperature and at low temperature; at low temperature every marker held steady, while at room temperature redness and capsaicinoids dropped significantly and furosine, a marker of heat damage, climbed. Same powder, same twelve months, one variable changed: the temperature of the shelf.

Light and damp finish the job. A 12-month packaging trial on a dried leaf powder stored at 39 °F (4 °C), 77 °F (25 °C) and 104 °F (40 °C) found the transparent plastic packs at 104 °F drifted furthest from baseline, lightness moving from roughly 40 to 60, while the cold opaque bags stayed closest to where they started. Damp is the one that announces itself: moisture reaches the powder, the powder cakes, and the caking tells you the jar has been breathing.

Which walls does the extension exclusion list rule out?

Six of them, named. Texas A&M AgriLife Extension's dried-herb sheet says to keep herbs and spices in tightly covered containers, in a dark place away from sunlight such as inside a cabinet or drawer, and to avoid storage above the dishwasher, microwave, stove or refrigerator, or near a sink or a heating vent.

• Above the dishwasher — a vented cycle pushes steam up the cabinet face for an hour.
• Above the microwave — the exhaust grille sends cooking steam straight at the shelf.
• Above the stove — heat and steam, and a clearance question the hob asks first.
• Above the refrigerator — warm condenser air rises into that band all day.
• Beside the sink — splash, plus the steam off anything washed by hand.
• Near a heating vent — dry heat, hours at a stretch, every winter evening.

The next line of that sheet is the one nobody quotes: if you are storing in an open spice rack, put it in a site away from heat, light and moisture. The exclusion list rules out six sites, not the shelf that hangs on them. The wall above the burners is its own argument, and we have taken the hob wall apart separately.

Your own wall cannot be answered from an article. Tape a $10 min/max thermometer where the jars would sit, cook normally for a week, then compare its maximum with the coolest cupboard in the room. A gap of a few degrees is a front row; a gap of 15 degrees is a place for the kettle, not for paprika.

Each one wins a column and loses another, which is why a single verdict keeps collapsing. Score the three against what degrades the powder and against the thing that decides whether you cook with it at all.

So the drawer wins preservation, the wall wins use, and the cabinet is a compromise that only works for the row at the front. Choose the drawer for anything you will still own in 12 months, and the wall for the jars you will empty in 4 to 6. How do you split a spice collection between two homes?

Count what you actually used last month, and let that number size the front row. The split is not by spice type, it is by turnover.

1. Turn every label to the wall tonight. Each time you use a jar, turn it back to face you. After 30 days, whatever is still facing away is backstock.
2. Work out how long a jar really lasts you. USDA FoodData Central puts a teaspoon of ground paprika at 2.3 g, so dividing the net weight on your jar by 2.3 gives the teaspoons inside it — a 60 g jar is about 26, or six months at a teaspoon a week.
3. Buy the front row small. A jar you finish inside 6 months never sits on a lit wall long enough for the fade to catch up with it, which is the whole argument for decanting only what you will use.
4. Give the backstock the dark. Tightly covered containers, inside a cabinet or a drawer, clear of all six sites above.
5. Refill instead of replacing. Top up the small jar from the packet, and put the packet back in the dark with its top folded shut.

Turnover is what a shelf-life table is really measuring. UF/IFAS Extension gives leafy herbs 1 to 3 years, ground spices such as paprika and nutmeg 2 to 3 years and whole spices such as peppercorns up to 5 years, and says both keep longer in cool, dry, dark spaces. A jar you empty in 4 months never reaches the stretch of that curve where storage decides anything. Size the front row by measuring the wall and measuring one of your own jars, not by counting the jars you own today.

Why can you not see what you already own in a cupboard?

Because a cupboard stores in rows and you only ever look at the first one. A wall cabinet is deep enough for jars to stand two rows back, and the back row goes invisible the moment the front row fills — which is exactly how a second jar of cumin gets bought while the first one sits behind the oregano.

Height finishes what depth started. The 2010 ADA Standards, the accessibility rules for public buildings in the United States, set the unobstructed high forward reach at 48 in maximum above the floor and drop it to 44 in once you are reaching over an obstruction, with 20 in the depth at which that drop kicks in and 25 in the deepest reach the standard credits at all. Those figures were written for seated reach in a public building, not for your kitchen. They are still the clearest published line anyone has drawn between what you take down and what you fetch a stool for, and everything above it quietly becomes long-term storage, which is the trap the top shelf sets.

A bigger cupboard therefore does not fix visibility. One row you can read from where you stand beats three rows you have to excavate, and that is why the wall keeps winning the argument it loses on preservation. Keep that row to what you genuinely cook with each week, and give the other 20 jars a dark drawer.

What I'd do

Split it first, then size the front row before buying anything. Ten or twelve jars leave my cupboard in a normal month; those go where I can read them, in small jars I finish in 6 months, and the rest live in a drawer in the packets they came in.

For that front row I would take the longest run of wall that survives the exclusion list, measure it, and buy to the wall rather than to the jar count. Houseland lists three widths — 11.4 in (29 cm), 13.8 in (35 cm) and 17.5 in (44.5 cm) — and puts around six, eight and ten standard 4 oz jars on them, though your own jars set the real number. Then leave it a month and watch which jars never move. Those are the ones the 176 °F oven test and the 12-month room-temperature trial were really warning you about, and they are the ones with something to gain from a drawer.
