What causes orange rust spots on stainless steel kitchen knives?
Two unrelated processes make an identical mark. The first is contamination, where free iron from another object lands on the blade and rusts in place. Those figures come from the SAE grade tables, which call 420 a cutlery grade and say plainly that it is less corrosion-resistant than the austenitic types, and from the 304 specification of 18 to 20% chromium, 8 to 11% nickel and no more than 0.08% carbon. Read the carbon column again. A cheap paring knife carries roughly twice the carbon of 304 and a hard 440C blade carries fifteen times as much.
Carbon does not just sit there: it locks chromium up as chromium carbide, so the chromium left free to build the protective film is less than the label suggests. The threshold matters because around 12% chromium is the minimum needed to ensure passivation, and a 12 to 14% cutlery steel with carbide-forming carbon in it sits close to that line before you have washed it once. Nobody makes knives from 304 because austenitic steel cannot be hardened by heat treatment, so it will not hold an edge. You are choosing sharpness and paying in rust risk, every time.
There is a free test for which family you own. Austenitic 304 is essentially non-magnetic while martensitic blades are magnetic, so a fridge magnet that grabs the blade and ignores the flat steel beside it has just told you they are different alloys.
How do I tell surface contamination from a real pit?
Clean one spot and watch what the metal underneath does. The test takes five minutes and a week of patience, and it decides everything else.

Count the pits before you decide anything drastic. Three or four freckles on a decade-old blade are cosmetic and will outlive you. Last, geometry. A knife lying against a basket wire, or under a wet cloth in the sink, makes exactly the gap that corrosion engineers worry about. Crevice corrosion works in gaps a few micrometres wide, where oxygen is used up and cannot be replaced, chloride concentrates, and the acidity in a neutral solution can fall to pH 2. The passive film needs oxygen to rebuild itself, and standing water is what keeps oxygen off it.
