Why don't restaurants use metal cutting boards?

Is a steel board actually against the rules?

Why do butchers cut on hard maple instead?
Because the Food Code carves out exactly one exception for wood, and hard maple is it. Wood may not be used as a food-contact surface at all, except that hard maple or an equivalently hard, close-grained wood is allowed for cutting boards, cutting blocks and bakers' tables. That is 4-101.17(B) (FDA Food Code 2022, chapter 4), and it is the legal reason a butcher's block looks the way it does rather than a preference for tradition.
The build carries as much weight as the species. A block is laid up end grain, so the edge parts the fibres and sinks between them instead of skating across, and the surface closes back over the cut. Steel offers neither move: it cannot be planed, and it never needs to be.
