Why the Sticky Grease Film on Kitchen Cabinets Survives a Wipe

The film is not dirt sitting on the paint. It is airborne cooking oil that has part-hardened into a polymer, and detergent has to stand on it rather than pass over it once. A sticky grease film on kitchen cabinets that still drags under your finger after cleaning means one of two things: the layer was never given long enough to soften, or what you are now feeling is your own soap and water, left to dry on the door.

Why does the sticky grease film on kitchen cabinets go tacky instead of coming off?

Airborne cooking oil does not stay oil - it slowly cures into a soft solid, and cured oil will not dissolve in soapy water the way fresh oil does. Oxygen inserts itself next to the double bonds in unsaturated fat, hydroperoxides form, and the fatty acid chains then cross-link into a polymer network - the same reaction that turns a drying oil into a skin. The rate runs alpha-linolenic ahead of linoleic ahead of oleic, so the fats highest in polyunsaturates set hardest. What is left, in the language of that chemistry, does not flow or deform readily. Your cloth skates over the top of it and carries away the loose half only.

The second half of the answer is the cleaner itself. Dish soap lifts grease while it is wet and in contact, so a spray that flashes off in 30 seconds never gets the standing time the film needs. Leave the soapy water to dry on the door instead of rinsing it and you have traded one tacky layer for another. Above 121 mg/L of calcium carbonate, the point where the USGS scale calls water hard, soap and calcium build calcium stearate - the insoluble precipitate everyone knows as soap scum - and the door dries with a fine grabby haze. Water hardness is why two people can follow the same method and get two different doors.

What is actually landing on the doors above the hob?

Everything that leaves the pan as vapour and finds a cold surface. Fat begins breaking down at a temperature you can look up: unrefined butter near 302°F, extra virgin coconut oil near 350°F, extra virgin olive oil near 374°F, refined canola between 428°F and 446°F. Past that the glycerol backbone degrades to acrolein, which is the sharp visible smoke. Doors within a step of the burner collect the same aerosol that loads your extractor mesh, so the two jobs belong in the same afternoon.

The Range Hood Store puts a metal mesh or baffle filter on a 1 to 3 month cycle for an average home cook, and more often for anyone frying regularly. Its method is a sink of hot water, a few drops of degreasing dish soap, a quarter cup of baking soda for stubborn build-up, then a 10 to 15 minute soak before a soft brush and a full air dry. Tom's Guide ran a near-identical routine in February 2026 and settled on roughly 10 minutes. A saturated filter pushes more of that aerosol straight back into the room, which is why doors turn tacky fastest in kitchens where the mesh has not been out in a year. Soot piles on top: a candle that drowns in its own wax pool and smokes is putting carbon on the same doors.

How do you get the film off without wrecking the finish?

Slowly, one door at a time, with standing time and two cloths. The order below follows what cabinet makers publish rather than what cleaning videos show - KraftMaid's care page asks for an emulsion cleaner formulated without wax, petroleum solvents or silicones, applied on a damp cloth and dried straight afterwards.

1. Mix warm water with a few drops of degreasing dish soap, not a strong solution. The stronger the mix, the more residue there is to rinse back off.
2. Wring the cloth out until it is damp and never dripping. KraftMaid says not to leave a moistened cloth sitting on a cabinet surface, and standing liquid is what swells a joint or lifts an edge.
3. Lay the cloth on the worst patch and leave it 2 to 3 minutes. This is the step almost everyone skips, and it does the work that scrubbing cannot.
4. Wipe from the top edge down in straight overlapping passes. Circles just push softened grease around and reload the part you cleaned.
5. Rinse with a second cloth wrung out in clean water. Soap left behind is the tacky layer you will feel again tomorrow.
6. Dry immediately with a lint-free cotton cloth. That instruction appears on both cabinet care pages I read, and it is what stops the hard-water haze forming.
7. Go round a second time on the survivors instead of pressing harder. Two gentle rounds beat one hard one, and abrasives are what take the sheen off a door permanently.

One thing to leave in the sink: the dish cloth. KraftMaid names it directly, and the logic holds - that cloth is already loaded with the grease and detergent you just washed a pan in.

Dish soap vs vinegar vs degreaser: what belongs on a cabinet door?

Warm water and dish soap is the one option every cabinet maker agrees on. Everything else depends on what your doors are finished with, which is what the third column is for.

Never chase a bleach spray with vinegar on the same door. Hypochlorite bleach gives off chlorine gas when it meets an acid, and with ammonia it produces chloramines such as nitrogen trichloride instead. Both irritate the airway, and a kitchen with the extractor off is the last room to find that out in.

Why does it come back sticky a week later?

Usually because something is still feeding it, or because the last clean left a film of its own. Four suspects, in the order I would check them.

• The polish you have been using is the culprit. Decor Cabinets is blunt: repeated wax cleaners build a wax film, and that film then attracts dirt, smoke and grease. The door gets tacky faster after every application.
• The soap was never actually rinsed off. A damp cloth with clean water and a dry cotton cloth afterwards is the difference between a clean door and a slightly sticky one.
• The extractor filter is saturated. If the mesh has gone past the 1 to 3 month mark, the hood is recirculating the aerosol rather than pulling it out.
• The pan is smoking before the food goes in. Butter at 302°F puts far more into the air than refined canola at 428°F, so a fat swap or a lower flame cuts the deposit at source. It is the same cured-oil chemistry that makes a titanium pan start sticking after a few uses.

The film holds smells as well as dust, which is why a kitchen can smell of last week's cooking with nothing on the worktop - the same trap as a board that still smells of onion days later.

What about the things mounted beside the hob?

They collect the identical film and they are the last thing anyone thinks to wipe. Open shelving, hooks and racks inside the splash zone go tacky first, because nothing shields them and they almost never come down.

Two surfaces means two methods, and a mixed-material piece makes that obvious. What I'd do

Book an hour rather than ten minutes, and start with the extractor. Drop the filters into hot water with a quarter cup of baking soda and degreasing dish soap and leave them the 10 to 15 minutes The Range Hood Store suggests - they will be ready roughly when you finish the doors above them. Do the doors with warm water, a few drops of soap, 2 to 3 minutes of contact on the bad patches, a clean-water rinse and an immediate dry with lint-free cotton. Then read the label on whatever you have been polishing with. If it lists wax or silicone, that bottle is part of the reason the film keeps returning.

Then fix the input, or you will be back here in a month. Run the hood before the pan gets hot and leave it going for a few minutes after you plate up, keep fats under their smoke point where the recipe allows, and wipe the splash zone weekly while the film is still soft. A film caught in week one comes off with a damp cloth and no chemistry at all. A film left for six months has cured into the finish, and that is a whole different afternoon.
