Ground spices clump because water arrived, dissolved a skin on the outside of each grain, and then left again. What it leaves behind is not damp powder but a set of solid bridges welding the grains to each other, which is why a caked jar feels like a brick instead of like mud. The standard description of caking in crystalline powders is exactly that two-step: a liquid bridge forms between microcrystals, then fuses into a solid bridge.
So the damage was done by a humid hour that has already passed, and airing the jar out today will not undo it. Why do spices clump in the jar rather than just go damp?
Because the wet hour that caused it has already ended. Table salt shows the mechanism at its cleanest: a sodium chloride crystal deliquesces once the surrounding air reaches 75% relative humidity at 77 °F (25 °C), and the droplet it turns into does not crystallise back until the air drops to 45% or lower. Both transitions were measured on single suspended particles and published in the Journal of Physical Chemistry A in 2024.
That 30-point gap between dissolving at 75% and re-crystallising at 45% is why a jar sets hard instead of drying back to loose powder. Water reaches the contact points where grains touch and takes a trace of soluble material into solution. The room then dries out, the water evaporates, and that material crystallises in the only place it was sitting, which is the joint. A few thousand joints later you have a block.
Spice powder is a long way from pure salt, so the exact humidity figures move with what is in the jar. The shape of the process does not move. You are not diagnosing a wet jar, you are diagnosing a jar that got wet once and then dried, and that is the same jar sitting in your hand now.
Where is the water actually getting in?
Four routes cover nearly every jar, and seasoning over the pan beats the other three put together. The Daily Meal's kitchen desk states it flatly: never shake your spices directly over a pot or pan on the stove, because the steam rises into the open neck and settles on the powder. That happens on a timescale of seconds, several times per meal, for years.

The two habits at the top of that table are the ones worth breaking first, because they repeat. A single wet spoon is a bad day; a jar that lives 8 inches from the kettle spout takes a humidity spike two or three times a day for as long as it sits there. The Daily Meal makes the same point about location, naming the sink and the stove as the two places a jar should not live.

Why does the barbecue rub set solid while the peppercorns stay loose?
Because a blend containing salt or sugar pulls water at a humidity that leaves a single pure spice alone. Work on salt mixtures published in Langmuir in 2025 puts the rule plainly: the water activity of a solution saturated with respect to a solid is always lower in the presence of a second solute, so a bed of mixed crystals liquefies at a lower humidity than either ingredient would on its own. A rub is a bed of mixed crystals. Sitting next to it, whole peppercorns have a fraction of the surface area and almost nothing soluble on the outside.
There is a baseline number worth knowing, and almost nobody quotes it. A 2022 survey of commercial spices in Foods measured water activity across ground and whole samples at 0.500 to 0.711, averaging 0.607 for ground spices and 0.642 for whole ones. An average ground spice is therefore in equilibrium with air at roughly 61% relative humidity, and that single figure tells you which direction water will travel. Keep the room below it and an open jar slowly dries out. Let the room sit above it and every jar in the kitchen gains water, whether you touch it or not.
Food factories act on exactly that. Science Insights notes that processing rooms handling powders are held at 35 to 45% relative humidity at around 77 °F (25 °C), well under the equilibrium figure, and that onion powder can turn into a solid brick within a week or two of opening in humid conditions. Onion and garlic powders are the ones that go first in a home kitchen too, and they go first for this reason rather than for anything to do with the brand.
How do you rescue a jar that has already set solid?
Break it up cold and dry, then judge whether the powder is still worth keeping. Stabbing a knife tip into a narrow glass jar is how tips bend and how jars chip, so the first move is getting the block out rather than attacking it in place.
- Tip the block onto a board. Houseland's kitchen range runs to a double-sided stainless steel cutting board with a juice groove on one face, and the flat face is the one for this, because a groove just collects the powder you are trying to save.
- Roll it, do not hit it. Fold the block into a sheet of baking paper and press with a rolling pin. Hammering scatters half of it and grinds the rest to dust that packs even tighter.
- Sieve what comes out. A tea strainer separates loose powder from the pellets that refuse to break, and those pellets are the joints that took the most water.
- Dry it only if it is salt or sugar heavy. Spread it thin somewhere warm and moving rather than hot: silica gel needs about 158 °F (70 °C) to drive its water back off, and the aromatic oils you are trying to keep leave long before that.
- Crush a pinch and smell it before it goes back. Fresh ground spice gives a clear top note straight away. Dust with a hint of the original means the clumping was a symptom and the jar is finished.
One knife note, because this is where kitchen knives get damaged for no culinary reason. If you are levering at a block with a blade, the blade is a chisel and the tip takes the load sideways. Ours pass or fail the paper test long before they meet a spice jar, and a tip that has already been bent this way is one of the cases where restoring beats replacing.

Silica gel does the job and has a published capacity; rice does a much smaller version of it, and in a still jar barely any version at all. A commercial silica gel is specified to hold 25% of its own dry mass in water at 77 °F (25 °C) and 50% relative humidity, and a 2025 fixed-bed study in Scientific Reports recorded that capacity falling by 34% as the bed warmed from 81 °F (27 °C) to 104 °F (40 °C). A desiccant packet does least on a warm shelf, which is exactly the shelf where jars cake, so a packet is not a licence to store spices near the hob.
Rice deserves a fairer hearing than it usually gets, and it still loses. A 2025 Scientific Reports paper on a two-stage dehumidifier packed with dry rice grain reached 73.57% dehumidification efficiency and stripped 2.0 grams of water from every kilogram of air passing through. Read the conditions, though: a blower forcing air through grain packed at 3290 kg/m³, with efficiency measured over 15 minutes of running. A teaspoon of rice sitting in sealed, still air has no airflow, no bed depth and no fan. It is harmless. It is not the fix.
Three things beat both of them. A screw-on lid with a gasket, because a shaker insert under a flip top is a permanent vent. Smaller jars, because the headspace you cannot fill is a reservoir of humid air that re-equilibrates with the powder every night. And for a homemade blend, an anticaking agent: commercial powders use calcium silicate or sodium aluminosilicate, and Science Insights suggests about 5% cornstarch by volume in a home mix, roughly half a teaspoon per two tablespoons, which does change how the rub behaves in a pan.
What I'd do
Buy a hygrometer before buying any container, and stand it where the jars actually live for a week. Under 50% relative humidity and the jars are not the problem, so look at the spoon and the seasoning habit instead. Over 60% and the room is pushing water into every open powder in it, which is a room fix rather than a jar fix: run the extractor longer, dry the washing elsewhere, move the rack off the wall behind the kettle. If you doubt the meter, seal it in a bag over a slush of table salt and water, where it should read about 75%.
Then cut the count. Six jars in daily use, kept small and screw-topped in a drawer on the cool side of the kitchen, with the bulk bags sealed in a cupboard away from the hob. Season into a spoon over a board, never over the pan, and refill the small jars every month or two rather than opening a big one four times a night.
