Why do you centre the pendant on the table and not the room?
Because the table is not in the middle of the room and never will be. It is pushed into a corner, against a window wall, or into a bay, and the ceiling box was centred on the room or on whatever furniture stood there before. Is the 9.8 in or the 11.8 in drum right for a small kitchen table?

How do I hang one over a banquette without knocking heads?

What if the ceiling box sits in the wrong place for a corner nook?
Swag the cord to a hook over the table centre. A cord hook screwed into a joist at that mark, with the cord running from the box across to the hook, is the standard fix, and it is why adjustable-cord pendants exist. The hook carries the weight of the fixture and the box carries nothing but the connection. Keep the run taut so the cord does not sag into the doorway, and put the hook on the mark you made, not near it. Measure the diagonal from box to hook and add the 60 to 62 in (152 to 157 cm) drop: that total is the cord length you need. Corner nooks have one more quirk, which is that two walls sit within arm's reach of the shade.
