Your cutting board cost per year is the purchase price divided by the years you genuinely get out of it, plus every bottle and service the board obliges you to buy along the way. Do that arithmetic and a $14.08 commercial plastic board and a $137.50 teak one finish far closer together than the shelf tags suggest.
What moves the number is not the material. It is whether the board asks anything of you after you carry it home. The teak one does: John Boos says to oil it a minimum of once a month, the oil is $14.95 a bottle, and the warranty behind the word lifetime runs for one year.

The short answer
Three lines of arithmetic settle it. A $14.08 plastic board thrown out every two years costs $7.04 a year; a $137.50 teak board kept 20 years costs $6.88 a year before oil, and about $22 a year once you add the bottle. The cheap board and the expensive board cost the same to own. The difference is which one asks you for twelve appointments a year.
So the honest comparison is not wood against plastic. It is boards with a running cost against boards without one. Oil, planing and replacement are the running cost; the price tag is a deposit.
The Houseland stainless board sits at the far end of that structure: 304 food-grade stainless steel, uncoated, dishwasher safe, with no oiling, seasoning or soaking at any point. Whatever number you put in the denominator, nothing gets added to the numerator.
What goes into a cutting board cost per year?
Four things, and only one of them is printed on the price tag.
- Price divided by service life. $137.50 over 20 years is $6.88 a year. The same board over five years is $27.50 a year, which is worse than the plastic one.
- Consumables. John Boos Mystery Oil is $14.95 for a 16 oz bottle. Steel and plastic have no equivalent line at all.
- Servicing. Grayhill Woodworking planes, sands and refinishes a wood board for a $62 flat rate including return shipping, and will not take a board thinner than 3/4 in. River Park Sharpening resurfaces commercial plastic boards up to four times before they are retired.
- Your unpaid hour. Twelve oilings a year, each one left to soak several hours or overnight per University of Maine Extension, is not free just because nobody invoices you for it.
Only the first line appears in any buying guide. The other three decide the answer.
Wood vs plastic vs steel: what does each one cost to keep?
Here are real retail prices from one commercial supplier, next to what each surface asks for afterwards.
| Board | Up front | Each year after | What ends it |
|---|---|---|---|
| Commercial white HDPE, 18 x 12 x 1/2 in | $14.08 | Nothing | Knife grooves. Too thin for the 3/4 in refinishing minimum, so it goes in the bin. |
| Colour-coded HDPE, 18 x 24 x 1/2 in | $29.33 each | Nothing | The same grooves, six times over if you bought the full colour set. |
| Richlite composite, 1/4 in | From $27.43 | Nothing | Wear, and no home fix at that thickness. |
| Bamboo, 3/4 in | From $48.17 | Oil, if you follow the wood schedule | Surface splitting and lifting at the seams. |
| Edge-grain teak, 20 x 15 x 1-1/2 in, 15 lbs | $137.50 | $14.95 of oil, plus $62 whenever it needs planing | Warping and cracking. The warranty covers one year. |
| Houseland stainless steel | From $49.99 | Nothing | Nothing that cleaning fixes. It is non-porous and goes in the dishwasher. |
Read down the third column rather than the second: the boards that cost nothing to keep are the $14.08 one and the steel one, and they sit at opposite ends of the price list. The teak board is the one buying a service contract you pay in kind.

View the 304 stainless steel board — 2 sizes & current priceHow much does the oil actually add each year?
About $15, on one bottle a year, and possibly double that on a big block. Mystery Oil is $14.95 for 16 oz. The bottle's own instruction is an application "once every 3 to 4 weeks or when the board looks or feels dry", the Boos care page says "a minimum of once a month", and University of Maine Extension lands on approximately once a month too. None of the three cites a study for the interval.
What none of them publishes is how much oil one coat takes, which is the number you need. So measure your own: mark the bottle with a pen the first time you oil, and by spring you will know whether your board drinks one bottle a year or three. That figure, not the brand's schedule, is your consumable line.
Whether the ritual buys hygiene is a separate argument. The money question is simpler. A $137.50 board with a $14.95 habit costs more in its second decade than a $49.99 board costs outright.

How do I make a wood board last long enough to be the cheap option?
Protect the two things that kill it early: standing water and one-sided treatment. The maker's own care sheet is stricter than most owners are.
- Keep it out of the machine. Boos is blunt: "DO NOT put Boos Block wood cutting boards into the dishwasher."
- Never let liquid stand on it. The same page warns that brine, water and blood soak in, expand the surface and soften the wood.
- Oil every surface, not just the face you cut on, and let it absorb several hours or overnight before wiping the excess off.
- Keep the receipt and keep oiling. Boos ties the two together: "Maintenance of you wood cutting board is important to maintain warranty coverage. Mystery Oil or a food-grade mineral oil are required."
- Budget $62 for a plane-and-refinish at the first deep groove, instead of $137.50 for a replacement. That only works if the board is at least 3/4 in thick.
Do all five and the teak board really is $6.88 a year plus oil. Skip step two for one summer and you are shopping again at year five.
Is "lasts a lifetime" a warranty or a sales line?
A sales line. The written warranty on a John Boos board is one year from the date of purchase or delivery, and it excludes normal wear and tear along with "exposure to extremes in temperature and humidity". A kitchen is a place with a hob, a sink and a kettle in it.
Read that next to the maintenance clause and the shape is clear. Longevity is real, but it is sold to you as a conditional promise: the board lasts if you oil it, keep it dry and keep it out of the dishwasher. Unfinished wood products carry no warranty at all.
None of this makes the board a bad buy. It makes the lifetime claim a projection of your labour rather than a guarantee of the timber, and a projection belongs in the running-cost column.
When does a board stop being an asset and start being a cost?
The moment the grooves stop coming clean. That is the retirement test in the FDA Food Code, adopted word for word by state rules: surfaces subject to scratching and scoring "must be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced". University of Maine Extension says the same thing to home cooks about deep grooves and cracks.
Commercial kitchens buy the middle option that home cooks are never offered. River Park Sharpening takes 1/32 to 1/16 of an inch off a scarred board, claims up to 60% savings against replacement, and will do it about four times before the board is done. Grayhill's $62 wood service is the domestic version of the same idea.
This is also why a scratched steel board is a different event from a scored plastic one. Marks on steel are surface patina on a non-porous material, not a pore for residue to hide in, which is why scratches on a steel board are cosmetic rather than a retirement notice.

What I'd do
Keep the wood board you already own and already oil. It is close to free from here: the money is spent, the habit exists, and $14.95 a year is not a reason to replace a surface that works.
Replace the one you cannot clean. A scored plastic board under the 3/4 in refinishing minimum has no repair path, and the 2023 study in Environmental Science and Technology that estimated 7.4 to 50.7 g of polyethylene shed per person per year is a second reason to stop sanding it down yourself.
Add steel only for the job wood cannot do: the raw-protein and carving board that has to be heat-washed rather than wiped. Ours is $49.99, and the range lives in the cutting board collection if you want the two sizes side by side. Budget for the trade-off honestly, though, because a hard surface is harder on an edge: steel boards do dull knives faster, so factor in how often your knives really need sharpening before you call it free.
