Why is it so hard to get a straight answer on this?
You keep seeing scary posts about plastic chopping boards and cancer and you do not know what is true. The coverage splits into two halves that both fail you. One half runs the gram figure under a cancer headline and never names the study that made the link, because none did. The other half says microplastics are in everything already, so stop worrying, which is a claim with no study behind it either. What did the NDSU gram figure actually measure?
It measured plastic particles released by chopping, then scaled that to one person over one year. The range is 7.4 to 50.7 grams, somewhere between one and a half and ten US nickels at 5 g a coin, and the spread is that wide because how hard you chop, how sharp the blade is and how cut up the board already is all move the number. It is an exposure estimate. It is not a dose tied to a disease, because no such dose has been published for microplastic from any kitchen surface. One thing the figure does not do is separate a new board from one that has been in the drawer for years. Why does a no-toxicity result not mean proven safe?

Three of those six rows are blank where a study should be. Treat plastic as a measured exposure with an unmeasured outcome and the decision gets simpler: reduce the exposure where reducing it is cheap, and stop reading the headlines.
How do I cut the exposure this week without buying anything?
Check the board you own, change what you cut on it, and replace it on condition instead of on a schedule.
- Run a thumbnail across the face of the board. A groove deep enough to catch a nail is open cut surface, and every pass of the knife works it further open.
- Stand the board up on the counter, 36 in (91.4 cm) off the floor on a standard run, and look across it toward a window. Scoring shows as shadow lines that are invisible from directly above.
- Split the jobs. Leave the scored plastic board on bread and vegetables, and move raw chicken and fish onto a surface that takes a full dishwasher cycle, so one board is not absorbing all 7 days of prep.
- Scrape with the spine of the knife, never the edge. The edge shaves the board into the pile you are about to cook.
- Carve hot roasts somewhere other than plastic. A roast leaves the oven far above the 120 F (49 C) most household hot taps run at, and whether that heat changes shedding has not been measured, so the cheap move is to remove the variable.
- Replace on condition, not on a date. Once a board no longer cleans up it is finished, and I have gone through the signs in when to replace a scored plastic cutting board.

What does a steel board change, and what does it leave alone?
It removes the polymer from the equation and leaves your knife edge worse off. 304 stainless is an iron alloy running roughly 18 percent chromium and 8 percent nickel, and this board is single piece stamped steel, uncoated, so there is no film on top to wear through into your prep and no plastic in it to shed. The surface is non-porous, so juices, odours and raw protein residue sit on it instead of soaking in, and the whole board goes through a dishwasher cycle afterwards.
