Nothing in a cucumber is glue. So why does food stick to my knife blade? A film of water sits between the wet cut face and the flat side of the steel, and surface tension — 72.8 mN per metre at 20 °C for water — holds the two together. The slice is stuck on by suction through a water film, not by stickiness in the food, so the fix is to break the film rather than to scrub the blade. Why does food stick to my knife blade at all?

Water does it. Both surfaces are flat, the cut face is wet, and the film between them is thin enough that surface tension acts across it like a weak glue, in the same way two wet panes of glass resist being pulled apart. Two things make it worse, and both are in your hands rather than in the food.

The first is pressing down slowly, which gives the wet face time to settle flat against the steel and squeeze the air out from between them in the second or two the cut takes. The second is leaving the last slice where it landed. Every slice left on the blade hands the next one a wet flat surface to land on, which is how one cucumber becomes 20 rounds flicked off the steel one at a time.

Why do potato slices stick worse than cucumber?

Starch is the difference, and it shows up in the numbers. How do you stop the slices sticking without buying a new knife?

Change the stroke first, the bench second and the knife last, in that order of cost.

  1. Draw the blade through the food rather than pressing it down in a vertical chop. A stroke that travels forwards or backwards as it descends shears the food apart along a moving contact patch, so less of the wet face ever lies flat on the steel.
  2. Finish each cut in one committed movement. Slow pressure is what lets the wet face flatten itself against the blade, and a cut finished in half the time gives the film half as long to form.
  3. Clear the slices every 3 or 4 cuts rather than after each one. Sweep them sideways with the flat of the blade into a bowl beside the board, because flicking one slice off after every cut is the habit that turns a 10 minute job into 20.
  4. Rinse for starch, wipe for juice, and do it in between vegetables. 10 seconds under the cold tap resets a potato-caked blade, and a cloth drawn over the spine, never along the edge, is enough for anything wet and clean.
  5. Try a thin film of neutral oil on both flats before you slice 5 lb of potatoes. It gives the water nothing to bond to, and I could not find a published test that puts a number on how much it helps, so treat it as a trick worth 2 minutes rather than a proven fix.
  6. Rule out a blunt edge in the first minute, before you blame the blade face. A dull knife wedges the food apart and drives the cut face hard onto the steel, so sticking gets worse as the edge goes, and the paper test settles that in about 5 seconds.

The bench matters more than people expect, and it is the cheapest link in the chain to fix. A board too small to sweep onto forces you to lift every slice off by hand, and a board that skates turns a committed stroke into a careful one. Granton vs kullenschliff: do the dimples actually help?

Both are real designs, and the difference is in where the hollows sit relative to the edge that does the cutting.

The mechanism is not in dispute: the hollows create air pockets that release the surface tension holding a damp slice to the steel, and the advice from people who test knives is to look for large scallops close to the edge, alternating from side to side. Scallops sitting high on the blade, where a slice of cucumber never touches, are decoration you paid for in the price of the knife.

There is a structural catch too. Flutings need a certain blade thickness, so they turn up on thicker, softer blades rather than on thin hard ones, which is part of why a fluted knife weighs more in the hand than the plain version of the same model.

Does blade shape matter more than the dimples?

Yes, and by a wider margin than the dimples manage. A European chef's knife is 8 in (20 cm) long and about 1.5 in (4 cm) deep at the heel, and both numbers work for you: the length lets you draw a whole cut in one pass, and the depth keeps your knuckles clear so you can commit to the stroke.

The knife that suffers most is the one usually sold as the fix. A santoku runs 5 to 8 in (13 to 20 cm) with a flatter edge, and it is built for a single downward cut landing evenly from heel to tip rather than for the rocking motion a Western knife uses. A flat face landing parallel to a wet cut face on every stroke is the worst geometry for suction in the whole knife block, which is why fluting shows up on santoku-style blades more than on any other shape.

Grind matters as well: a full convex grind or a hollow grind pulls the middle of the blade away from the food, so less of the face ever touches the slice, and that is the same trick the dimples are chasing applied to the whole side in one go.

Fix the stroke, fix the bench, and buy steel only if the first two fail, in that order. Slicing rather than chopping, clearing into a bowl every 3 or 4 cuts, and a rinse between the potato and the cucumber will take most of the annoyance out of tonight's prep at a cost of nothing.

Does a sharper knife stop food sticking?
