I am about to spend a hundred dollars on a pan and I do not know what separates a good one. That is the sentence sitting under most titanium pan searches, and it is hard to settle because the word titanium does 2 jobs on a product page. Job 1 names the metal you cook on. Job 2 names a powder mixed into a non-stick coating, which is a different pan with a different service life. Both photograph the same in warm kitchen light, so the picture cannot tell you which of the 2 you are holding.

What to look for buying titanium pan before you look at price?
Whether there is a coating on the cooking surface, which is check 1 of 4. 3 phrases on a listing all mean coating: titanium-reinforced, titanium-infused, titanium non-stick. 1 phrase means the bare metal you cook directly on: uncoated. Buying the finish instead of the material is the most common mistake people make with kitchen tools, and a pan is where you notice it soonest, because daily cooking is 7 uses a week on the same surface.
The difference you feel is a countdown, and only 1 of the 2 pans has one. A coated pan gives you release from use 1 and no technique, and that release lasts exactly as long as the coating does. Bare metal gives you no countdown and 1 habit instead: preheat on medium for about 2 minutes, add oil, wait for the shimmer, then add food and let a crust form. Eggs and fish lift cleanly off a surface that has had its 2 minutes.
There is also the question people actually mean when they ask about coatings, and 1 published figure covers it. In an April 2025 Consumer Reports survey of 2,158 US adults, 65 percent said they were concerned about PFAS in non-stick cookware. - Lay the ruler or the 8 in (20 cm) knife spine across the base and hold it up to a window: light under the middle means the base is dished, light at both ends means it has domed.
- Slide a sheet of printer paper, about 0.004 in (0.1 mm) thick, under the straight edge and drag it toward the centre; where it stops is the high point, and that is where the heat will pile up.
- Turn the pan a quarter turn, 90 degrees, and read it again, because a base can be flat on 1 axis and dished on the other.
- Run it empty on medium for 2 minutes, take it off the heat and add half a teaspoon (2.5 ml) of water; water beads and skitters above boiling, 212 F (100 C), so watch where the bead settles, and if it runs to one edge and stays there the base moves when it is hot.
Flatness matters most on induction and glass, because those 2 hobs heat the base itself rather than the air around it. A base that touches only at the rim gives you a hot ring and a cool centre, and no amount of technique fixes it. On gas you can cheat by sliding the pan across the flame, on induction you cannot, and 1 fridge magnet on the base of a pan you already own will tell you whether that hob can see it at all.
Rivets, welds or screws, which join do you want to see?
Rivets, as long as the heads sit flush on the inside face and a fingernail runs across them without catching. All 3 joins hold; they fail differently, and only 1 of them warns you first.

If the pan is in front of you, hold it at arm's length by the handle for a slow count of 5, which is roughly what a one-handed flip asks of your wrist. Thickness gets argued about because of contact, and induction is where you feel it: the hob energises the base itself, so a thin base hands heat straight to the food while a thicker one spreads it first.
