Which Wood Cutting Board Is Best for a Knife Edge?

The figures are the ones the Wood Database lists per species: teak, bamboo and hard maple among them. Where the 4th column says none, that entry carries no blunting note, and the database adds one only when a species shows an above-average propensity for dulling cutters, usually from silica or mineral deposits.
Why Doesn't the Janka Number Explain a Dead Edge?
Because Janka is a flooring number: it ranks 950 lbf against 1,450 lbf for resistance to a dent, not for abrasion. The test presses an 11.28 mm (7/16 in) steel ball halfway into the face of a plank and records the force that took. It predicts what a dropped tin does to a floor.
A 500 lbf gap in dent resistance did not kill an edge that was fine six weeks ago. Cherry at 950 lbf and beech at 1,450 lbf are both softer than the steel in your knife by orders of magnitude, so neither is deforming the blade by being hard. What the Janka figure does predict is scarring, and there it runs the other way: cherry at the bottom of the range takes deep cuts that hold onion and garlic in them, so the softest board is not a free win either.
The written standard never asked for softness. Virginia's retail food code at 12VAC5-421-1040, which mirrors the FDA Food Code, permits hard maple or an equivalently hard, close-grained wood for cutting boards, and the Cooperative Extension service at NC State repeats that phrase to home cooks. Hard and close-grained. Not soft.

Is Silica What's Actually Abrading the Edge?
Yes, on teak and bamboo, and on nothing else in that table. Silica is quartz, and the Maine Geological Survey's field hardness kit puts quartz at 7 on the Mohs scale against 5 for a pocket knife blade, 5.5 for window glass and 6.5 for a hardened steel file.
Quartz at 7 outranks the 6.5 file you would sharpen with. It is the only ingredient in a board harder than the edge crossing it, and it is spread wildly unevenly between species:
- Teak, silica up to 1.4% and a pronounced blunting effect on cutting edges, at 1,070 lbf. Softer than maple by 380 lbf on the number everyone quotes, rougher on the edge by the number nobody quotes.
- Bamboo, silica 0.5% to 4.0%, almost all of it in the outermost layers of the stem, which is precisely where your knife lands. Carbide cutters rather than steel are what the Wood Database recommends for machining a material that is up to 4.0% mineral at the skin, and it notes that tools dull quickly.
- Maple, beech, walnut, cherry and red oak carry no blunting note at all, anywhere from 950 to 1,450 lbf. Their entries flag other things: oak stains around iron, cherry blotches under stain, walnut tears out on figured grain. None of them flags the cutters.
Darmawan and colleagues, writing in the journal BioResources, ran high-speed steel and tungsten carbide through wood-based materials for 2,000 m and measured edge recession every 200 m; the silica-rich wood cement board did severe damage to the high-speed steel edges. A kitchen is gentler than a moulder chewing through 2,000 m of stock, but the abrasive is the same quartz.
Does End Grain Really Heal Itself, or Is That a Sales Line?
Nobody has measured it. The fibres-part-and-close-again explanation is repeated on the site of nearly every company that makes end-grain boards, and I could not find a single controlled edge-retention result behind it anywhere, on end grain or on any board wood. The softness rule rests on the same evidence: 0 controlled trials and a great deal of confident prose.
What has been measured on board woods, ever since the 1994 papers, is bacteria. Dean Cliver's UC Davis lab ran more than 10 hardwood species against Salmonella, E. coli O157:H7, Campylobacter and Listeria and found essentially no differences among the wood species, as the lab's own research overview records. Species choice is therefore a knife question and not a hygiene one, which means you can settle it on silica alone and lose nothing.
End grain still earns its price, on scarring rather than on edges. A face-grain board shows every cut; an end-grain block closes over most of them, and a board with fewer open scars is a board you can actually get clean. That is a maintenance argument and a good one, but it is not the edge-retention argument it gets sold as.

What Is Dulling Your Knives Faster Than the Board?
Almost everything else your blade touches that sits above 5 on the Mohs scale. America's Test Kitchen deliberately dulls new chef's knives on a glass board when it needs blunt knives for a honing-rod trial, which tells you how fast a hard non-wood surface works.
- Glass at 5.5, and granite, which is largely quartz at 7. Both outrank the blade at 5. Marble is calcite and softer than your knife at about 3, but it has no give at all, so the edge absorbs the whole stop. - Scraping the pile across with the edge, several times a minute. Turn the knife over and push with the spine; this is the habit that most often undoes a 10-minute sharpening.
- The dishwasher rack. Blades knock against steel tines through a cycle that runs an hour or more and come out with a rolled edge no board caused.
- Bone, frozen food and squash skin. That is chipping rather than dulling, and it needs a different fix.
- Not knowing when the edge went, or whether it went in week 1 or week 6. Run the paper test before you blame anything, then set a sharpening interval in weeks rather than in vibes.
Work through those 5 before you buy a fourth board. If the edge dies inside 2 weeks on maple at 1,450 lbf, the board is not the variable.
