The only difference on the screen is the number, and a number with nothing behind it reads as a markup. What is behind it is three manufacturing steps that do not photograph.

What does blade gauge actually change in your hand?
Gauge decides whether the blade bows before the dough gives. This one is 0.03 in (0.65 mm) stainless steel, which is a scraper gauge rather than a cleaver gauge. Why does finishing an edge take longer than stamping one?
Stamping makes the blade in one hit, and deburring is a second pass that takes off what the first hit leaves behind. Why does the handle usually go before the blade?
The handle is the only part of a bench scraper with a join in it, and a join is two materials moving against each other every time you press down.
