Why is the best stainless steel cutting board so hard to spot in a listing?
You want one metal chopping board that lasts, and you cannot tell what actually makes an expensive one better. Which grade should the listing name, 304 or 430?
304, and it belongs in the description, not in an answered question three screens down. The number is a recipe: about 18% chromium and 8% nickel, which is where the resistance to citrus, salt and dishwasher detergent comes from, and it is the same grade as a kitchen sink, a commercial prep surface or a good pan. 430 carries similar chromium and no nickel at all, so it is cheaper to roll and less able to shrug off pitting from acid and salt. Uncoated matters as much as the alloy: there is no finish on a 304 board for detergent to strip, so a wash cycle cannot wear off a surface that was never applied.

The magnet test gets repeated everywhere and it is half a test. Annealed 304 is essentially non-magnetic and 430 is magnetic, but a single-piece stamped board has been cold worked, and cold work can leave 304 tugging at a magnet along an edge or a corner. Use a magnet to rule a board in, never to rule one out, then ask the seller to put the grade in writing. In normal kitchen use 304 resists rust and staining, and acidic food, salt and citrus will not pit it, which is the longer answer behind what salt actually does to a steel board over a year of brining and seasoning.
How thick does the plate need to be, and how do you check it?
Thick enough not to flex under your palm, and the only way to know before it arrives is to get a decimal out of the seller. Sheet steel is sold by gauge and the numbers run backwards: 20 gauge is 0.0375 in (0.95 mm), 18 gauge is 0.05 in (1.27 mm), 16 gauge is 0.0625 in (1.59 mm). For scale, a US nickel is 0.077 in (1.95 mm) thick, so even a 16 gauge plate is thinner than the coin in your pocket, and "heavy duty" on a listing tells you none of this. Thin steel gives itself away: it rings under the knife, and it travels across the counter while you lean on it.

- Ask for the thickness in inches or millimetres before you pay. I treat anything at or under 18 gauge, 0.05 in (1.27 mm), as sheet metal, not a plate.
- Hold the answer against a US nickel, 0.077 in (1.95 mm). Anything a seller will not put a decimal on, price as thin.
- When it arrives, hold it by one short edge and knock the centre with a knuckle. A thin sheet rings for a second; a heavier plate goes dead.
- Press the middle with your palm on a flat counter. Visible flex means it wants full contact underneath, not an overhang at the sink.
- Wring out a thin cloth and lay it under the board. Steel is smoother than wood and can feel slick at first, and a damp cloth or a thin silicone mat stops the slide.
The trade you are making is the edge on your knives. Does the groove hold juice, or is it decoration?
It holds, as long as it goes the whole way round and the board is sitting level.
