How are PFAS, PFOA and PTFE different?

Does “PFOA-free” mean the pan has no PFAS?
No, and this is the most common misunderstanding in the whole category. PFOA was historically used as a processing aid in making fluoropolymer coatings. Manufacturers stopped using it, and the resulting label is accurate as far as it goes. But the coating itself — PTFE — remains a PFAS. Removing PFOA from the production of a PFAS coating does not make the coating stop being one.
So a PFOA-free non-stick pan is a pan that no longer contains one specific compound, coated in a material from the same family. If your concern is PFOA specifically, the label is meaningful. If your concern is PFAS as a category, it answers a question you were not asking.

Be practical rather than dramatic. A coating that is scratched down to the metal has lost its release, which is the one thing it was bought to do. At that point it is a mediocre pan regardless of what you think about the chemistry, and most people replace it for performance reasons alone.
If you are phasing coated pans out gradually, retire the worst ones first — the ones with visible bare patches, flaking edges or a chalky, dulled surface.
