The best skillet pan for the way most people actually cook is an uncoated metal pan measuring 11 in (28 cm) across the cooking surface, sold with a lid that fits it. Drop to 10.2 in (26 cm) only if you cook for one, or if the biggest ring you own is a back burner. Diameter settles more dinners than material does: two chicken thighs crowded into a pan give up their water and steam, and the same two thighs with room around them brown.

Why does the pan you reach for twice a day keep failing you?
Because it was chosen from a photograph instead of from your hob.
The searches give the complaint away: good frying pan, best frying pan for eggs, healthiest pans to cook with. Underneath all of them sits the same story. Eggs that used to slide now weld themselves to the middle, the surface has gone dull in an arc where the turner scrapes, and nothing tells you whether the pan failed or you did. Two things decide that before you pay, and neither of them shows up in a photograph: how wide the metal is against the ring you actually cook on, and whether the surface is a layer applied to the pan or the pan itself. Which surface should you cook on, and which one should you skip?
Coated aluminium for speed, cast iron for heat, stainless for sauces, bare titanium for a surface with no layer to lose: four types, four jobs, and no row that wins every column.
Conductivity explains most of the table before you read a word of it. Heat moves through aluminium at roughly 205 watts per metre kelvin and through titanium at roughly 22, so one metal warms fast and scorches fast, and the other asks for a wait before anything touches it. Best, in the table below, means best at a stated job. There is no pan that is best at all of them, and a table that says otherwise is an advert.

The titanium row is the one Houseland makes, and it gives up two of those columns on purpose. It will never warm as fast as aluminium, it will never hold heat under a steak the way iron does, and it will never come out of a dishwasher. What it does instead is put the same metal on the plate on the last day you own it as on the first.
What is the best skillet pan for a small hob and a small kitchen?
The 10.2 in (26 cm) one, and your burner makes that call rather than your ambition.
Test what you already own before you spend anything. Put your current pan on your largest ring, heat it dry on medium for one minute, then drop a teaspoon of water at the rim and another in the centre. Water boils at 212 F (100 C) in every kitchen, so the result is not open to interpretation: if the centre spits its drop away while the rim drop just sits there, that pan is already wider than your heat, and a bigger one only widens the cold band around the edge.

Then count portions instead of people. A US large egg is about 2 oz (57 g) in the shell, and two of those with a slice of bread beside them fit the smaller pan without overlapping. Two chicken breasts, four sausages, or a steak that needs air around it want the 11 in (28 cm) pan, which is about the width of a dinner plate at 10 to 11 in (25 to 28 cm) across. Put the larger load in the smaller pan and you have not cooked a sear, you have made a stew.
Storage is the part people forget in a galley kitchen. A base cabinet is 24 in (61 cm) deep, which sounds like room to spare until you remember the handle is metal and riveted to the body, so it does not unscrew and it does not fold. Measure from the far rim to the tip of the handle, then measure the drawer under your hob, and you will know before delivery rather than after.
How do you get a bare pan to release eggs with no coating?
Heat first, fat second, then leave the food alone until it lets go by itself.
The whole technique fits inside the preheat, and it does not change from one dinner to the next.

- Put the empty pan on medium and give it about two minutes. On induction use medium rather than full power, because induction pushes heat in very fast and medium is what gives the even surface temperature that clean release depends on.
- Flick in three drops of water. If they hiss flat and disappear, the metal has only just cleared 212 F (100 C) and it is not ready. When they bead up and skate across the pan instead, it is.
- Add oil, enough to move when you tilt the pan, and wait for it to shimmer. On a properly heated pan that takes seconds rather than minutes, and clarified butter kept soft in a crock behaves the same way if that is what you have to hand.
- Lay the food down and leave it there. A crust forms, and the crust is the thing that lifts. Eggs and fish come off a properly heated surface cleanly, and they tear when you poke at them early.
- Turn with wood or silicone. Metal has no coating to cut through here, so it will not wreck the pan, but it does mark the hammered finish over time.
- Deglaze while the pan is still warm. A little warm water, one minute, and the fond lifts straight out of the dimples with a cloth.
That preheat is the entire trade. You are buying back the coating with attention, once per meal, for as long as you own the pan.
What goes wrong with an uncoated pan, and what fixes it?
Two things go wrong early on, and one thing goes right that gets mistaken for damage.
Sticking is the first, and it is nearly always a cold pan or early oil. Food dropped onto metal that has had 30 seconds instead of two minutes grabs on contact, and pulling at it makes the tear worse. Take the pan off the heat, deglaze it warm, and start the preheat again from the beginning.
Marks are the second. Metal utensils leave visible lines across the hammered surface over time, and because there is no coating to cut through, those lines are cosmetic rather than structural. Wood or silicone keep the finish looking new, which is exactly why the care line says so.
The thing that goes right is the colour. Bare metal darkens into a soft, even patina as it gets used, the same way carbon steel and cast iron do, and a patinated surface releases better than a new one. It is not damage and it is not a coating breaking down.
Washing is where the habit has to change. Hand wash, and do it while the pan is still warm: a little warm water, one minute, and the dimples give up the fond to a cloth faster than a machine cycle would. The board you prepped the chicken on can go in the dishwasher, and there is a real case for a metal board on exactly those grounds, but the pan cannot.
