If you react to nickel, the nickel allergy stainless steel cutting board question is really three questions: what the steel contains, how long food sits on it, and whether that contact is hot and acidic. 304 stainless is roughly 18% chromium and 8% to 10.5% nickel, but a board holds a chicken breast for two or three minutes at room temperature instead of simmering tomatoes at 212 °F (100 °C) for an hour, so it is a much smaller question than a steel pan. Nobody can honestly call any nickel exposure zero, and for a board in particular there is no published transfer figure to point at.

Why is this so hard to get a straight answer on?
I react to nickel and I want to know whether a steel board is a problem for me. That is the question, and what comes back is usually about earrings, or about cookware, where acid simmers against hot metal for an hour, or a listing that says stainless steel and stops there with no grade printed anywhere. Grade is the whole thing here, because 304, 316 and 430 hold very different amounts of nickel, and a shop that will not name the number has left you guessing at the one detail that decides the answer. What is actually in 304 stainless steel?
Iron, about 18% chromium and 8% to 10.5% nickel, which is why you often see the grade stamped 18/8. Chromium does the corrosion work by pulling oxygen out of the air into a passive film only nanometres thick, and that film re-forms on its own every time a knife cuts through it. Nickel is what holds the steel in an austenitic structure, which is what makes it tough enough to be stamped as a single piece and formable enough to carry a groove around a full perimeter without a weld. It is alloyed through the metal rather than plated on top, and plating is where most nickel reactions start, on a belt buckle or an earring post that has worn through.
This board is uncoated, which matters more than it sounds. There is no lacquer, no seasoning and no oil film between the food and the alloy, so what the page names is what the food touches, on day one and on day one thousand. It is the same grade used for kitchen sinks and commercial prep surfaces, which is a useful thing to hold on to while you are trying to picture the exposure. Most kitchens already carry several square feet of 304 at the sink, in contact with hands and water every day.
Does 304 steel leach nickel into food?
In amounts anyone has measured, only under conditions a board never sees: heat, acid, long dwell time and a fresh or abraded surface, usually all four at once. The leaching research that exists is cookware research, done by simmering acidic sauces in stainless pans for hours and testing what ended up in the pot. Even there, reported release falls as the same pan is used and washed repeatedly and the passive layer matures. A board gives you none of that. Food sits on it at room temperature rather than at 212 °F (100 °C), for the two or three minutes it takes to break down a chicken, and then the whole thing goes in the dishwasher.
Anyone quoting you a microgram figure for a cutting board is extrapolating from pan studies, because the board measurements have not been published. That is the honest state of it, and it cuts both ways, because nobody can promise you zero either. What the specification does support is narrower and more useful: the surface is uncoated 304 with nothing on top of it to break down, the steel is never heated, and the contact is brief, which is the same reasoning behind what is known about nickel and chromium coming off a steel board in ordinary use.
Which grade should I look for, 304, 316 or 430?
304 is the sensible one of the three here, because 316 carries more nickel rather than less, roughly 10% to 14% against 304's 8% to 10.5%, plus 2% to 3% molybdenum for chloride resistance. 316 is the better steel for a boat fitting or a lab bench and the wrong direction for this question. The genuinely low nickel stainless is 430, a ferritic grade at about 17% chromium and under 0.75% nickel. You can pick it out with a fridge magnet, since 430 grabs hard while 304 and 316 hold weakly or not at all. That is a rough test rather than a certificate, so ask the seller to name the grade in writing.

That 2023 North Dakota State University study, published in Environmental Science and Technology, estimated 7.4 to 50.7 grams of microplastic per person per year from a polyethylene board and reported no cell toxicity in its tests. It is an exposure figure and not a harm figure, and what those particles do over decades is not known, which is the limit of what a yearly microplastic number can tell you. If you want nickel out of the equation completely, tempered glass and untreated hardwood contain none at all. Which foods should I keep off a nickel allergy stainless steel cutting board?
Nothing has to come off it, but the ones that raise the question are acidic or salty with dwell time: cut citrus left sitting, tomato and vinegar mixed on the surface, and brined meat resting for more than a minute or two. Acid plus heat plus time is the combination that moves metal ions in cookware, and on a board you have removed the heat and you control the time. The corrosion half is settled by the specification, since acidic foods, salt and citrus will not pit 304 and there is no coating for detergent to strip, which is most of what salt does and does not do to a steel board.

To keep the contact as short as it reasonably gets, work in this order:
- Cut the acidic thing first and move it straight into a glass or ceramic bowl. Anything that would sit on the steel for more than a minute or two does not need to sit there at all.
- Use the flat side for prep and the grooved side for raw meat and carving, since the juice groove runs the full perimeter of that side and holds what comes out of a resting roast.
- Rinse under the tap within a minute of finishing. Residue sits on top of a non-porous surface, so it comes off without a scrub or a soak.
- Put it in the dishwasher. Both sizes are dishwasher safe, and there is no oiling, seasoning or drying face down to remember afterwards.
- Store it upright in a cabinet gap or flat in a drawer. A standard base cabinet is 24 in (61 cm) deep, so a slim board goes in on its edge beside the baking trays.

On a low nickel diet, keep the proportions straight: the lists a dermatologist hands out are dominated by foods such as oats, cocoa, soy, nuts and canned goods rather than by prep surfaces. Cookware is the utensil worth asking about first, because that is where acid and heat sit against steel for an hour at a time. A board is the same alloy in a much quieter situation.
