Four bacterial strains fell below the detectable limit within 0 to 2 days on oak, yet were still recoverable after 15 days on polycarbonate, aluminum and stainless steel, which is the reverse of what the word non-porous implies and the reason the stainless steel vs wood cutting board hygiene question keeps getting answered wrong.

What did the bacteria study actually measure?
It measured how long bacteria survive on bare, dry material, not how clean a board gets once you wash it. Chen and colleagues, writing in Antibiotics in 2020, deposited roughly 10 million colony-forming units of four strains onto coupons of sessile oak, polycarbonate, aluminum and 316 stainless steel, then sampled them for 15 days. The oak had been dried for four weeks at 70°F (21°C) and 60% relative humidity first. For Enterococcus faecalis, Klebsiella pneumoniae and Staphylococcus aureus, the minimum detectable limit was reached within 0 to 2 days on oak, and was not reached in 15 days on the other three materials.
Two things in that design should temper how far you carry the result. The four organisms are hospital strains, Acinetobacter baumannii among them, rather than the Salmonella and Campylobacter that arrive on supermarket poultry. And the coupons carried no food residue at all, which flatters wood: dry, clean grain is exactly where the drawing-down effect works, and it is a condition a working board is almost never in.
A 2023 study in Foods asked the same question with chicken juice on the surface and the ranking moved. Campylobacter survived up to 4.5 hours on plastic at 59°F (15°C) and 3.5 hours at 77°F (25°C), while on stainless steel and wood it lasted 3 hours. With poultry residue in play, steel and wood came out level and plastic was the laggard.

Neither material saves you. The board you can return to a known-clean state wins, and that is a habit question rather than a materials question. Here is what separates them, job by job.

The mainstream advice is not wrong, it is answering a different question. The University of Maine's Bulletin 3108 says non-porous materials are easier to clean and generally considered more hygienic because they do not absorb bacteria. Arizona Cooperative Extension's AZ1076 puts it from the wood side: microorganisms can become trapped in those surfaces and are difficult to dislodge by rinsing, and once trapped they survive in a dormant stage for long periods of time. Both are describing cleanability. The oak study was describing neglect. Your kitchen needs an answer to both.

How do you clean either board so the material stops mattering?
Scrape it, wash it with detergent, sanitize the washed surface, then dry it completely. The last step is the one that gets skipped.
- Scrape the board before any water touches it. In the Foods trial, scraping with a knife alone brought Campylobacter loads down from 2.97 to 2.10 log10 CFU, which is most of what a rinse achieves and none of the splashing.
- Wash with hot water and detergent, never water on its own. Running water alone left 60% of the boards in that trial still testing positive, at 2.85 log10 CFU against a starting load of 3.44.
- Sanitize the washed surface, never the dirty one. Bulletin 3108 mixes half a teaspoon of unscented chlorine bleach into a quart of water, applied evenly and left one minute before wiping dry; AZ1076 writes a full teaspoon per quart. Check the strength printed on your bottle before you measure.
- Dry the board completely before it goes back in the rack. Ben Chapman at NC State describes fine hardwood grain pulling fluid down and trapping bacteria, which are killed off as the board dries. Bacteria need moisture, so a damp board stacked flat is the failure case on every material.
- Keep one board for raw meat and a second for ready-to-eat food. Both extension sheets ask for that split: raw animal products on one, fruit, vegetables and bread on the other, so nothing headed for the table meets a surface poultry has been on.
The uncomfortable finding in the 2023 trial is that every ordinary routine left the boards contaminated. Knife scraping, running water and a household disinfectant each cut the load, and not one of them cleared it; the authors concluded the three main cleaning methods were inadequate in eliminating contamination to a safe level. That is an argument for heat, not for a material.
Does a dishwasher actually sanitize a cutting board?
Yes, on the sanitize cycle, and only on that cycle. GE's own documentation says the machine keeps running until the water inside reaches about 150°F, the figure NSF 184 sets for a residential dishwasher, and that the cycle is rated to reduce 99.999% of bacteria on what is loaded into it. A hot tap wash does not reach that, and a wipe with a cloth is not in the same conversation.
That is where the two materials genuinely part. Bulletin 3108 notes that solid wood boards may be OK in dishwashers but some may warp, and that bamboo may warp or get damaged, so the wood board that survives a weekly sanitize cycle is the exception rather than the rule. The Houseland steel board is listed as dishwasher safe with no oiling, seasoning or soaking at any point, which means the sanitizing route and the everyday clean-up are the same action.
Steel only beats wood if the dishwasher actually runs. A steel board wiped with a cloth and stood on the drainer has used none of its advantage, and the oak result at the top of this page is what you are left holding. Wood is the more forgiving material for a cook who clears up slowly. Steel is the better material for a cook who clears up immediately, or who loads the machine after every raw-protein job. If the slickness is what puts you off steel, that is a separate and fixable complaint, and what a steel board is genuinely best at sets out where it earns its place.

Bulletin 3108 says boards with deep grooves, cracks or excessive wear should be replaced when they can no longer be cleaned effectively, and AZ1076 says all plastic and wooden cutting boards wear out over time and excessively worn ones should be discarded. Chapman's phrasing is the one to keep: the more grooves a board has, and the bigger they are, the more area is available for trapping moisture and giving bacteria a place to proliferate. A scarred board fails on any material, which is why the ageing curve matters more than the opening spec. Wood and plastic accumulate voids that hold water for days. Single-piece stamped steel takes fine scratching and a matte patina instead, and that changes how the board looks rather than what a sponge can reach, which is why scratches on a steel board read as a cosmetic story and not a hygiene one.
What I'd do
Two boards, split by job. Steel takes raw meat, poultry and fish, plus the carving of cooked roasts, because those are the jobs where you want the whole surface heat-sanitized within the hour and the juices caught instead of run onto the counter. Wood takes bread, produce, cheese and the 20-minute chopping sessions, because it is kinder to an edge and a knife spends most of its working life on vegetables anyway.
The trade-off that decides it for most cooks is the knife rather than the bacteria: steel is harder than wood and takes an edge down faster, which whether steel boards dull your knives works through in detail. Split the work between two surfaces and you pay that cost only on the raw-protein jobs, which are the ones worth paying it on.
