What is the rocking chop technique, and what does the blade need?
A rocking chop plants the tip on the board and lifts only the heel, so the edge rolls forward through the food in one arc instead of dropping onto it. Virginia Cooperative Extension's knife-skills sheet puts it in three instructions: keep the tip on the cutting board, use a rocking motion, and push the knife forward as it is lowered into the food. That forward push is not a flourish; it is the entire mechanism.
The roll only exists if the edge has a curved belly, so telling someone to rock a straight-edged blade is bad advice. Curvature converts wrist pivot into forward travel, and Western profiles differ in how much they hand you: German-style blades are deeply and continuously curved along the whole cutting edge, so they roll along most of their length, while the French pattern stays straighter and sweeps up only at the tip, rocking mainly in its last third.
Japanese vegetable profiles sit at the other end, deliberately. A santoku has limited rocking travel because so little of the edge stays in contact with the surface, and the nakiri goes further with a straight edge, no or virtually no curve, made to cut all the way to the board without a horizontal pull or push. Length is not the variable: santoku blades run 5 to 8 in (13 to 20 cm) and nakiri 6 to 8 in (15 to 20 cm), and neither rocks.
Test yours in 10 seconds: lay the edge flat, lift the heel through a small arc, and watch where the contact patch ends up. On a deep Western curve it travels several inches down the edge; on a flat vegetable profile it barely moves, because you are tilting a straight line rather than rolling an arc. That travel is your stroke length, and no effort lengthens it.
Why does sliding the edge sideways make a cut cheaper?
Because the downward force falls as 1 divided by (1 + the slice/push ratio squared), so any sideways travel at all is a discount. Atkins, Xu and Jeronimidis derived that in the Journal of Materials Science in 2004 and checked it on an instrumented deli slicer cutting cheddar and salami (Cutting, by pressing and slicing, of thin floppy slices of materials). The ratio is sideways blade speed divided by downward speed.
Press straight down and the ratio is 0, which costs full force; match sideways speed to downward speed for a ratio of 1 and the force halves; run sideways 3 times as fast and it drops to a tenth. Their figure 3 shows the fall starting the instant any sideways motion appears, which is why a blade that will not press through tomato skin goes through it the moment you draw it back.
Two limits keep this honest. Nothing is created: the work is set by the area you separate, so lower force is paid for over a longer path, as a lever trades force for distance (scienceofsharp walks through the same paper). And friction caps the gain, which is why the wheel force in their salami runs peaked at a ratio of roughly 1.5 to 2.5.
The paper's closing section decides this question. For reciprocating blades, anything travelling back and forth rather than in one continuous direction, it states that the ratio is zero at both ends of every stroke and greatest at mid-stroke, so the force signal is spiky and the benefits of a high slice/push ratio in continuous cutting are not fully obtained. A rocking chop is a reciprocating stroke, so it never collects the tenfold saving, only a fraction of it, with a full-force spike at both ends of every rock.
Rocking chop vs push cut vs straight chop: which suits what?
Match the motion to the height of the food and the shape of your edge, in that order. The straight chop is the worst deal in force terms and still right whenever the food cannot be slid against.

Speed is the column nobody can publish: no time trial for these motions exists that I could open and check, and force is not speed, so treat any ranking in seconds with suspicion, including mine. What you can measure is honest: time 1 lb of onions rocked, then 1 lb push cut, counting strokes as well as seconds. Which technique puts your guiding hand closest to the edge?
The rocking chop does, and it is not close. Its defining rule is the one Virginia Cooperative Extension puts in a single line: do not lift the front of the knife off the cutting board. An edge that never leaves the board is never out of reach of the hand feeding food under it, while a push cut or a straight chop clears the board once per stroke, and that gap is the window a hand moves in.
The same sheet sets that hand's position: curl the fingers in like a claw, tuck the thumb and little finger behind the others, and let the knuckles guide the side of the blade. It works, but it does not hold itself together when you are tired, rushed or talking, and the rock punishes that first, because the food advances in small increments toward an edge that is already down.
One exception points the other way. The two-handed mince, flat palm on the spine while the heel pumps, puts the free hand further from the edge than any other motion here, and only works because the tip stays planted. The rock gives you both the worst hand position and the best one.

- Anything standing taller than the belly gets a push cut. A whole carrot, a potato, an upright half onion. The rock cannot reach the top without the tip rising, and once the tip is in the air you are chopping.
- Rock only what is already flat and low. Halve or plank it first, cut face down, so the roll can travel through it in one pass.
- Save mincing for last and change hands on it. Once the pile is small and loose, switch to the two-handed version, palm flat on the spine: faster per stroke, and the free hand sits furthest from the edge of anything here.

Rock herbs and garlic, push cut everything else, and stop trying to make one motion cover the board. The rock spends part of every cycle at a slice/push ratio of 0, so its advantage over a straight chop is real but partial, and only exists if your edge has a belly to roll on. On a nakiri or a flat-ground santoku the question is moot.
The part I would not compromise on is the guiding hand, because the rock holds an edge down on the board while your fingers feed food into it in small increments. Hold the claw, and if your attention drifts on a long prep session, give that hand a physical stop instead.
