Why does the board you already own suddenly feel like a problem?
Your plastic board is scarred, you read somewhere that it sheds microplastics, and now you are at the sink wondering whether metal is actually a better idea or just a shinier one. A credit card is 0.03 in (0.76 mm) thick: stand one on edge in the deepest mark on your board and you will know in a second whether you are looking at a scratch or a channel.
What actually comes off a plastic board and into the food?
Polyethylene, in amounts somebody has finally put a number to. The range is that wide because it depends on the board, the knife and how much of your week is spent chopping, and the useful part sits underneath the headline: the material leaves the board, and the only place it can go is the food.
The figure that matters more is the one on your own board, and it takes ten seconds to get. Drag a thumbnail across the cut zone at 90 degrees to the knife marks. If the nail skates, you have scratches; if it clicks down into grooves, the blade has been taking material away, and no wash cycle puts it back.
Steel fails differently, and that is the whole argument for it. The blade marks the surface instead of cutting into it, so the board takes on a matte patina and stays non-porous underneath, with nothing to lift out and nothing to collect in. Non-porous is doing the heavy lifting in that sentence, and at the sink it means this: juices, odours and raw-protein residue sit on top of 304 stainless rather than soaking in, which is why a wash cycle finishes the job instead of hiding it. It is also why there is nothing to oil, season or reseal, on day one or on day one thousand.

Read the middle rows first if you cook a lot of poultry. Chicken is safe at 165 F (74 C), but everything before that happens on the board, and a non-porous surface that goes through a full dishwasher cycle is a different proposition from a scored one you scrub by hand. That gap narrows against wood, which I have gone through in more detail in this comparison of steel and wood on hygiene, and it is why the two boards end up doing different jobs instead of replacing each other. The upkeep row is the one people skip and then regret: wood wants oil and an upright dry, plastic wants replacing once it is gouged, and steel wants a wash.

What does a steel board actually do to your knife edge?
It takes the edge down faster than wood or plastic does, and not because the board is harder than the blade. A kitchen edge is hardened to roughly 56 to 60 HRC, harder than any board you will ever put under it, and what saves an edge is give. Plastic and wood deform under the blade and let it pass. Steel does not, so the edge deforms instead. A board cannot both refuse to give up material and protect your knife, because the give is what protects the knife.
Houseland's product page says so out loud rather than burying it: steel is harder than wood or plastic, so it will dull an edge faster than an end-grain block will. Nobody can hand you a cuts-per-sharpen figure, because it depends on the steel in your knife, the angle it is ground to and how much of the week it spends on metal. So stop chasing that number and set a rhythm: slice a sheet of paper every 4 weeks, sharpen the moment the edge snags rather than cutting cleanly, and set a 4 to 6 week reminder if you would rather not think about it.
Keep the steel for protein and carving, and let a wood board take the 30 minutes of onions, carrots and herbs that happen most nights. If you have no intention of ever putting a knife on a stone, this is the wrong board for you, and I would rather say it here than take your money.
How do you run this board through a normal week?
Anchor it, give it only the work it suits, and put sharpening on the calendar rather than on instinct, in this order:
- Put a damp cloth or a thin silicone mat under it. The surface is smoother than wood and can feel slick at first, and a damp layer stops the board moving without anything being fixed to the counter.
- Give it the work it is built for: raw meat, poultry, fish and carving cooked roasts. The 30 minutes of nightly vegetable prep goes to wood.
- Carve on the grooved side, prep and serve on the flat one. The groove runs the full perimeter of that side, so a chicken resting after it comes out at 165 F (74 C) keeps its juices on the board.
- Scrape with the spine of the knife, not the edge. Turning the blade over to sweep garlic into the pan costs nothing and takes the board out of the edge's way.
- Test the edge on paper every 4 weeks and sharpen when it snags. The 4 weeks is the check, not the interval, and the reminder is only there so the check actually happens.
- Wash it in the dishwasher, or in hot soapy water with a cloth. Nothing needs oiling, waxing or drying face down, and salt and citrus will not pit 304 in normal kitchen use, which I have covered in more detail on salt.
- Store it on edge in a cabinet gap or flat in a drawer. A base cabinet is 24 in (61 cm) deep, so the slot beside your sheet pans is usually the easiest home for it.
