Why does the board end up being the thing you worry about?
You want to cut raw fish at home and you are not sure your board is safe for it. The worry lands on the board because the board is the one part of the job you can inspect. You can see the knife scars in a plastic board, the grey shadow along a wooden one, the smell that survived last week's mackerel. What you cannot see is whether the tuna sat at 50 F (10 C) in the back of a van for three hours before it reached the counter.
So the anxiety attaches to the surface, because the surface is in front of you and the cold chain is not.

Fish leaves more behind than most proteins. The slime layer, the blood line along the spine, a few scales that come off with the skin, and on steel all of it sits on top where detergent and hot water reach it in one pass.
304 is a recipe rather than a brand name: roughly 18 percent chromium and 8 percent nickel, which forms the passive chromium oxide layer on the surface and keeps re-forming it. A citrus cure, a salt brine or a vinegar wipe will not pit it, and dishwasher detergent strips nothing, because there is no coating or seasoning on it to strip.
The board is the only part of a raw fish session you can fully sanitise, which is exactly why it should be the part you stop thinking about.
The trade is your edge. Steel is harder than wood or plastic, so a fillet knife ground at 15 to 20 degrees per side loses its edge faster on it than on end grain. That is a sharpening question rather than a hygiene one, and it is why most owners keep steel for raw protein and carving and a wood board for the daily pile of onions. The plastic number is worth stating carefully. A 2023 North Dakota State University study in Environmental Science and Technology estimated that a polyethylene board sheds roughly 7.4 to 50.7 grams of microplastic per person per year, and found no cell toxicity in its tests. That figure is an exposure estimate, not a finding of harm, and what that exposure does over a lifetime is not known. Steel's honest case on this is narrow: it sheds no polymer and it holds no knife scars. That is the claim, and there is nothing underneath it.

How do I prep raw fish on a steel board without cross-contamination?
Work cold, move in one direction, and finish with a full wash rather than a wipe. The sequence below is the whole method, and steps 5 and 6 are the two people skip.
- Bring the fish out of a fridge running at 40 F (4 C) or below, and keep the rest of it over ice at 32 F (0 C) while you work on one section.
- Flat side up for skinning and portioning; groove side up for anything that runs, since the channel goes the full perimeter of that face and holds brine, melt water and carving juices on the board.
- Lay a damp cloth or a thin silicone mat underneath. Steel is smoother than wood and can feel slick until it is anchored, which matters most on thin slices.
- Cut everything raw first and move finished pieces to a chilled plate. Anything eaten as it is, herbs, lemon, cucumber, waits until after the wash, and the same logic applies when vegetables come before the fish rather than after.
- Scrape slime, skin and scales into the bin with the back of the knife, then rinse in cold water before anything hot touches it. Hot water sets protein onto a surface.
- Run a full dishwasher cycle, loaded upright so water reaches both faces including the groove. Detergent plus a final rinse at 140 to 160 F (60 to 71 C) does more than a sink ever will.
- No dishwasher: hot soapy water, then a sanitiser pass at about 1 tablespoon of unscented bleach per gallon (15 ml per 3.8 L), left wet on the surface for a full minute, then rinsed.
- Wash your hands for 20 seconds between the raw stage and the plating stage. Your hands touch more surfaces in that kitchen than the board does.
Total working time on the fish itself should stay inside two hours at room temperature, and one hour if the kitchen is above 90 F (32 C). The board does not care. The fish does.

What can the board not protect you from?
Parasites, and everything that happened to the fish before it reached your kitchen. Steel kills nothing. It removes one variable, the surface, and leaves the other three where they were.
Parasite risk is handled by freezing, not by washing. The guidance commercial kitchens work to is minus 4 F (minus 20 C) for seven days, or minus 31 F (minus 35 C) until solid and then held for 15 hours. A domestic freezer often runs warmer than minus 4 F and rarely holds a steady temperature through a door that opens twice a day, so this is a question for the person selling you the fish.
Ask them what was frozen and for how long. "Sushi grade" is a shop's word rather than a specification, and the useful answer is a temperature and a number of days.
Bacteria are handled by cold and by time. Below 40 F (4 C) they slow down; between 40 and 140 F (4 and 60 C) they do not. Two hours out is the outside limit, one hour above 90 F (32 C), and that clock starts at the fish counter rather than at your front door.
What the board does is smaller and more reliable than any of that: no pores, no cut edges, no coating, one wash cycle, done. What is not known about long-term microplastic exposure stays not known, and no material claim from us changes that.
