Why is this question so hard to get a straight answer to?
You wash the board, stand it on the rack, and in the morning you still wonder whether something is alive on it.
Search that and you get page after page comparing wood with plastic, and almost nothing about what happens on steel between one dinner and the next. The food-safety writing answers a material argument, because a material argument is the one everybody is having. It is the wrong argument. What does drying actually do to the bacteria left on a board?
It takes away the one thing they cannot do without, which is water.
Bacteria need water, so a board that is bone dry by bedtime is a board with nothing left to drink. Drying is not sterilising, and anyone telling you a dry surface is a sterile surface is overselling it. What drying does is stop the population growing and start it falling. Washing removes them; drying stops the survivors making more.
Temperature does the rest. There is no honest single figure for how many hours survival runs, because it depends on how much residue is left, how humid your kitchen is and how warm the room stays overnight. The way to check is not a stopwatch. Run a fingertip across the board: a dry steel surface drags very slightly, and a surface still holding a film glides and leaves a faint print behind your finger.

Where do bacteria on stainless steel cutting board surfaces actually hide?
In four places, and not one of them is the flat middle where you do the cutting.
- The juice groove corners. The groove runs the full perimeter of one side, and the corners hold the last water after washing. Tip the board and let the channel drain before it goes away.
- The underside. A board laid flat on a wet counter traps a film between two surfaces and neither one dries. Rounded corners and a slim profile mean it will stand on edge instead, which dries both faces at once.
- The edges you hold. Hands go there with raw protein on them, and cloths skip them.

- Wash it: hot soapy water and a cloth, or the dishwasher. If it is the dishwasher, run the full cycle rather than a rinse-and-hold, because a household hot tap sits around 120 F (49 C) and a full wash goes well past that.
- Dry both faces and the groove, with a towel or in air. Raw fish leaves a thinner film than poultry, but the surface decides the outcome either way.
- Store it dry and upright, not flat under something else. It is slim enough for a narrow cabinet gap or a drawer, so this costs you no counter space.
Two things off the board matter as much. Wash your hands for 20 seconds after handling the raw bird, and cook the chicken itself to 165 F (74 C), because a clean board does nothing for an undercooked thigh. Vegetables do not need this routine every time, though there are days they do, and that day is the day the same surface is going back to raw meat.
