Why does ground turkey come out dry and bland?
Less fat, less collagen, and a high finish temperature. USDA FoodData Central lists raw 93% lean ground turkey at 8.34 g of fat per 100 g, against 20 g for 80% lean ground beef. Fat-free ground turkey drops to 1.95 g of fat per 100 g, which is why ATK's turkey chili insists on 93% lean, not 99% fat-free breast.
Turkey isn't short on water. USDA lists 72.6 g of water per 100 g for the 93% lean kind and 61.9 g for 80% lean beef, and ATK says ground turkey is full of moisture, more so than ground beef. The problem is holding it in. ATK explains that ground turkey is so low in collagen it can turn dry and tough even with a short simmer.
Bland has its own cause. ATK calls ground turkey mellow, and its recipes add salt, savory ingredients and a strong spice blend to make up for it.
Your turkey isn't dry because it's turkey. It's dry because nothing is holding the water in.
How to cook ground turkey in a skillet so it stays moist?
Treat it, cook it briefly, and stop at the right temperature. These steps follow ATK's turkey chili, which cooks 2 lb of 93% lean turkey.
- Make the slurry: 2 tablespoons of water, 1 teaspoon of table salt and 1/2 teaspoon of baking soda for 2 lb of turkey.
- Break the raw meat into rough 1/2 in pieces with your hands, drizzle the slurry evenly over it and toss gently. ATK says the baking soda raises the pH, which helps the meat trap its juices.
- Preheat and oil the pan. ATK heats oil over medium until shimmering; the titanium pan's listing preheats the empty pan on medium for about two minutes, then adds oil.
- Cook, breaking it into 1/4 in pieces, until no longer pink, 6 to 8 minutes in ATK's recipe.
- Add the seasoning right away so it coats every piece.
- Check 165 °F in several spots; FSIS says dishes with ground meat should be checked in more than one place.
Tip: keep any simmer after this short. ATK's chili simmers only about 10 minutes once the liquid goes in, specifically so the meat doesn't dry out.

Is ground turkey done at 160 or 165 °F?
165 °F. USDA FSIS lists 165 °F as the safe minimum internal temperature for ground poultry, measured with a food thermometer.
Here's where the sources part ways, plainly. ATK's skillet turkey burgers are cooked to 160 °F and rested 5 minutes, and ATK's recipe notes also describe 160 °F as the serving temperature. That's below the USDA number. Follow USDA and cook ground turkey to 165 °F.
- Don't trust pink or white. FSIS says the color of cooked poultry is not always a sure sign of safety, and turkey can stay pink even after reaching 165 °F.
- Probe thin food from the side. For thin foods like patties, FSIS says to insert a dial thermometer through the side so its 2 to 3 in sensing area sits in the center.
- Check crumbles in several places. FSIS gives that rule for any dish containing ground meat.
This is why the moisture tricks matter. You can't rescue dry turkey by pulling it early, so keep it juicy on the way to 165 °F. The same logic runs through cooking chicken breast in a pan so it stays juicy.
The number is fixed. The juiciness is the part you control.

Cold pan vs preheated pan: which works for turkey burgers?
The recipes disagree, and the answer depends on your pan's surface. Here is what each source does:

ATK's cold start lets the outside brown slowly while the inside catches up, and the lid wraps the burgers in steam so they cook evenly. But it was written for a nonstick skillet. Houseland's uncoated pan listing says release depends on about two minutes of medium preheat and a little fat, which conflicts with a cold start. In that pan, preheat first, then keep ATK's medium heat and lid.
Tip: add the patties gently and leave them until they release on their own.

What size pan fits a pound of ground turkey?
ATK cooks four burgers from 1 lb of turkey in a 12 in skillet, each shaped about 1/2 in thick and 4 in across. For crumbles, any pan works if the pieces have room to lose their moisture fast.

Do the math before you shape four patties. An 11 in pan has about 95 sq in of floor (3.14 x 5.5 x 5.5), and a 12 in skillet about 113 sq in (3.14 x 6 x 6). So the 11 in pan has about 84% of ATK's room (95 divided by 113). The patties still fit: four 4 in circles in a 2-by-2 block need a round floor of about 4 x 2.41 = 9.6 in, so they go in one round in either size, with less space between them than in ATK's skillet.
The trade-off: bare metal is not a coated nonstick, and 93% lean turkey brings less fat to the pan than beef does, so the preheat and the spoonful of oil aren't optional.
