Food and counters look gray under some LED kitchen ceiling lights because the light renders saturated red poorly, and the CRI number on the box does not show it. The US Department of Energy says CRI is especially poor at predicting how saturated reds look, which is why a separate score, R9, is used for red. Tomatoes, strawberries and raw meat are exactly those reds.
The spec that fixes it is a CRI of 90 or higher with an R9 of 50 or higher, the pair California's JA8 standard sets for residential high-efficacy light sources, in a warm or neutral white. Why does food look gray under some LED kitchen ceiling lights?
A white LED is usually a colored LED with a phosphor, and the CRI score is an average that leaves deep red out. Those 2 facts together explain the gray steak.
The Department of Energy's LED basics page explains that LEDs are not white light sources by nature; they emit nearly single-color light, and most white LEDs get there by phosphor conversion, a phosphor on or near the chip that turns the colored light white. How much deep red ends up in that white light depends on the product.
Then there is the score. Under the CIE test method, the general CRI, written Ra, is the average of 8 test colors, R1 to R8, which are moderate in saturation, or pastels. Saturated red is a separate sample, R9, and it never enters Ra. So 2 lights can both print CRI 90 on the box while 1 of them renders red well and the other renders it dull.
- What you see: red peppers look brownish, raw meat looks gray, wood cabinets look flat.
- Why: the light carries little deep red, so red objects have little red to reflect.
- What the box shows: usually Ra only, which averages the 8 pastel samples.

Color temperature changes the tint of the whole room; CRI changes how accurate colors look within that tint. You need to pick both.
CRI is scored against a reference light at the same color temperature, so a CRI figure says nothing about whether the light is warm or cool. A lighting explainer built on the CIE method puts it this way: a 2700K lamp at Ra 95 and a 6500K lamp at Ra 95 are each faithful to a different reference. That is why a high-CRI light can still feel wrong in a kitchen: the number is right, the tint is not.

How do you fix dull kitchen lighting without a remodel?
You rarely need a new ceiling: swap the bulbs you have for high-CRI ones and add 1 aimed light over the prep area. Work through it in this order.
- Read the packaging of your current bulbs. If it shows CRI 80 and no R9, that is likely the gray-food light.
- Swap screw-in bulbs for ones that state CRI 90 or more and an R9 value, in the same color temperature as the rest of the room.

What should you check before adding a ceiling spotlight?
The spotlight is hardwired at AC85V-260V, so it needs a qualified electrician, and it hangs below the ceiling. Plan for both before you order.
